Chef Tetsuro Maeda of Txispa, located in Axpe in the Basque Country and celebrated for a style that fuses Basque culinary tradition with Japanese sensibility, pairs his dishes with tableware selected by his father, a longtime dealer in tableware. Typically, the vessel plays a supporting role to the dish. Here, that relationship is reversed — the vessel takes the lead, and the food responds. The evening interrogates the boundary between two cultural practices, food and craft, while a conversation between father and son unfolds across the table.

Tetsuro Maeda
Born in Tokyo in 1984 and raised in Kanazawa, Ishikawa Prefecture, he spent his early years working in various fields unrelated to cooking, including as a snowboard instructor. Through an introduction from an acquaintance, he moved to the Basque Country, Spain, in September 2011. His culinary career began in earnest at Alameda in Hondarribia.
The following year, he started training under his mentor, Víctor Arguinzoniz, at Asador Etxebarri in the village of Axpe. Over the course of 11 years, he became a key member of the kitchen team, serving as sous-chef in his later years.
In May 2023, he opened his own restaurant, Txispa, also in Axpe. Within just six months of opening, Txispa was awarded one Michelin star. The following year, he was nominated for The Best Chef Awards, and in 2025, Txispa ranked 85th on The World’s 50 Best Restaurants list.
