Yakimanju, a beloved local soul food in Gunma for children and adults alike, is known for its fragrant, sweet-and-savory miso sauce. That sauce also pairs wonderfully with rice and meat. We combined this traditional flavor with our popular chicken cutlet, creating a dish where crispy coating meets rich miso—a local taste that feels both new and comfortingly familiar, just right for a coffee shop.
